Our sweet (not spicy) tomato relish. The addition of ginger & garlic makes it more than a simple chutney. Use as a marinade for BBQ meat, spread on a sandwich, it’s great on a cheeseboard or used as a base for pasta dishes or in a stir fry.

RECIPE IDEA - Sesame Chicken Stir fry

INGREDIENTS:

(SERVES 2)

2 CHICKEN FILLETS CUT INTO SLICES

1 RED PEPPER ROUGHLY CHOPPED

1 MEDIUM WHITE ONION CUT INTO THIN SLICES

1 CARROT CUT INTO THIN BATONS

1 TBSP SESAME OIL

2 TBSP TOMATO CHILLI JAM

1 TBSP SOY SAUCE

1 TSP SESAME SEEDS

 

METHOD;

Heat sesame oil in a large wok, cook chicken until golden colour on the outside, add stir fry vegetables & cook for a further 2 minutes. Add soy sauce & Digby's Tomato Chilli Jam, and cook until sticky. Sprinkle with sesame seeds. Serve with egg noodles or steamed rice. (ensure chicken is piping hot & completely cooked before eating)
